Kathy & Nick's Cold Noodles with Spicy Sauce

  • 8 ounces thin whole wheat noodles

  • 1 tablespoon plus 1 teaspoon sesame oil

  • ¼ cup peanut butter

  • 3 tablespoons brewed tea or water

  • 2 tablespoons hot chili oil

  • 3 tablespoons light soy sauce

  • 1 tablespoon red wine vinegar

  • 2 large scallions, chopped

In a kettle or large saucepan, bring water to a boil. Add the noodles and cook, stirring occasionally, until they are tender, 7 minutes or less. Drain in a colander and run under cold water until they are thoroughly chilled and the strands are separated. Drain. Sprinkle with the teaspoon of sesame oil and toss to coat. Set aside.

To make the sauce, spoon the peanut butter into a mixing bowl and add the tea or water gradually, stirring with chopsticks or a fork. Stir in the 1 tablespoon sesame oil and the remaining ingredients, except the scallions.

Arrange the noodles on a serving dish. Sprinkle the chopped scallions over the noodles and serve cold.
